Can You Trust Your Sushi Chef?

If you can't trust your sushi chef, you may need to read a report from the Centers for Disease Control (CDC) on gempylotoxin food poisoning.

Warning, you may not be able to trust your Sushi Chef. Eight Sushi bars in San Diego were recently found guilty of seafood fraud when they substituted crawfish for lobster in "Lobster Rolls." Sushi sleuths in San Diego, using sophisticated DNA testing techniques, found crawfish and pollock being sold as lobster to unsuspecting diners.
In California, the substitution of cheaper seafood is a criminal violation.  Not only are guilty parties subject to fines; but they also have to reimburse investigative costs incurred by local authorities. The sushi bars in San Diego were fined a total of $14,000 and had to pay all investigative costs.
This is somewhat better than sushi bars in Florida.  One investigation of seafood fraud in the Sun Shine State showed that 100% of the restaurants in the study were substituting high priced sea food items with cheaper items. Investigators reported that it was common to find Escolar, which sells for about $13 a pound being sold as White Tuna a $25 a pound fish.
The scientific name for Escolar, Lepidocybium flavobrunneum, sounds a lot better than what this fish is called in other parts of the world.  A member of the snake mackerel family, Escolar is commonly known as "castor oil fish" and Ex-Lax fish.  A substance produced by the escolar, known as gempylotoxin, produces a number of gastrointestinal illness symptoms including diarrhea!
Eating less than six-ounces of escolar will not normally produce a laxative effect.  Some individuals may be  more sensitive to gempylotoxin and can experience symptoms including nausea, vomiting, abdominal pain, headache and a yellow or orange colored diarrhea in as little as two hours after exposure.  The illness produced is normally not life threatening and ceases within 24 to 48 hours.
Sushi bars have also been found to be serving lower cost tilapia as red snapper and listing grouper on the menu and serving their customers the cheaper panga fish.  Seafood fraud is not confined to San Diego and Florida. One sushi bar owner claims the practice is widespread and is common in the U.S.  "When you can buy a cheaper fish for only $8 to $12 a pound and sell it to unsophisticated customers for $16 to $20 a pound, it's a no brainer."
