The agreement specified that a nonprofit organization known as Right to Choose Healthy Food, and headed by raw food advocate Aajonus Vonderplanitz, would lease his farm's 50 cows and dozens of chickens -- "the works," says Hershberger. In exchange, the organization would have access to all the food from the animals: milk, eggs, and meat.   Then, on June 2, agents from the Wisconsin Department of Agriculture, Trade, and Consumer Protection raided his Grazin' Acres farm near Madison, and placed seals on the refrigerators in his small store. He was operating without a retailer license and a dairy license, the regulators said. The fact that he wasn't open to the general public, but was selling direct to "members" of his farm, didn't matter.   The day after the raid, Hershberger cut the DATCP seals and defiantly re-opened for business. His confidence was buttressed by the fact that he decided that day to sign the contract with Right to Choose Healthy Food.   The deal is "simple," says Hershberger, and besides, "I think Aajonus knows what he's doing."   The wizard of raws   Vonderplanitz followed up by sending a letter to Wisconsin's DATCP explaining that Hershberger   ... is not engaged in commerce. His farm animals are leased to Right To Choose Healthy Food's Grazin' Acres Farm Coop Club who owns them. Vernon Hershberger is the boarder, caretaker, milker, packager, and deliverer of our animals' products. Since the private club owns dairy, egg, and meat production, there is no commerce involved. Since no commerce of buying or selling raw milk and our other products to the public is involved, or distributed in public places, government agencies have NO JURISDICTION over the production, labeling and use of the club's products consumed by its members, nor is any permit required ... It is shameful for (DATCP) to try to prevent us from producing and distributing our health-giving raw milk and other farm products to our members by threatening and imposing false warrants, seizures, and arrests of our property. Since you were duly warned that this was a private club and you had no jurisdiction over it, your actions were criminal stealing, kidnap,  and trespass.   Though DATCP agents have since been back to his farm twice more with search warrants, the last time taking Hershberger's computer, checkbook, and other records, there has been no sign of any criminal or other charges being filed against the farmer.   If the experiences of other farmers like Hershberger are any indication, there's a good chance no charges will come. Over the last eight years, Vonderplanitz has put together lease agreements giving Right to Choose Healthy Food, and its hundreds of consumer members around the country, the rights to the land and produce of about 40 small farms.   While there have been a number of raids, especially in recent months, as I described previously for Grist, there have yet to be any legal challenges brought against the lease arrangements, he says. "If they had jurisdiction, they would have busted us a long time ago," he told me.   Not only is Vonderplanitz not afraid of a legal challenge, he welcomes one. "I hope they file charges against us," he says. While the distribution centers in major urban areas, like the one raided in Venice, must comply with fire codes and zoning regulations, they need not comply with food licensing or labeling laws required of foods sold to the public, he argues. Nor must they comply with the federal prohibition on interstate sales of raw milk. There can't be such a prohibition for member leaseholders, he maintains, since they own the farm products when they are produced.   "If you take your property from Pennsylvania to California, there is no federal jurisdiction," he says. Vonderplanitz likens the farm lease agreements to automobile leases. "In lease agreements, you have total ownership of the contract and responsibility for the items leased. If you wreck a leased car, you are totally responsible."   The analogy is important, he says, since lease-related law has a 75-year history of recognition by our legal system. "Herdshare" and "cowshare" agreements, used in many states to give raw-milk drinkers shares in cows and goats, are less legally secure, he says. He likens the rights of a herdshare owner to those of an owner of stock in a major corporation, where shareholders have certain financial rights, but don't necessarily have right to the corporation's products, or responsibility for the products. (Though herdshare rights were upheld by an Ohio court in 2006, and the state didn't appeal the case.)   Vonderplanitz maintains that the lease agreements aren't just devices to enable foodies to avoid complying with food licensing rules and the federal interstate raw milk prohibition, and has successfully persuaded farmers who've considered backing out of the agreements to stand firm.   In a case last winter, a Midwest farmer in the midst of a two-year lease agreement with Right to Choose considered shutting down his raw milk production after the U.S. Food and Drug Administration sought to enforce warning letters maintaining the farmer was violating the federal prohibition on raw-milk sales across state lines. Vonderplanitz says he told the farmer that his group would enforce its lease agreement by taking over the farm and cows to continue producing milk for members. The farmer, encouraged by Vonderplanitz's commitment, decided to fire his lawyers, who'd encouraged him to accept the FDA mandate, and continue with the Vonderplanitz organization. Vonderplanitz says he notified the FDA, much the same as he did Wisconsin DATCP in the Hershberger case, that the farm was under a lease agreement, and says the farm continues to provide his members with raw milk.   Another farmer who signed on with RTCHF was Daniel Allgyer. He made his decision shortly after agents from the FDA showed up at his Pennsylvania farm last April with a search warrant and a letter alleging he was involved in interstate sale of raw milk. Allgyer continues to supply RTCHF with milk.   Vonderplanitz sees himself as having "rescued" these and other farmers from possibly being thrown out of business by FDA and state agriculture authority actions against private food organizations. "They have left all the people alone since I notified the authorities."   The raid on the RTCHF warehouse in Venice, Calif., three weeks ago, along with that on Sharon Palmer's farm in nearby Ventura County, whose goats are under lease to RTCHF, represent payback in Vanderplanitz's view.   "They are looking for any way they can to break us," he says. "They're not going to get away from it."   He says a number of prominent Los Angeles lawyers have offered legal services, and RTCHF plans to sue the government agencies involved in the raids against Rawesome and Sharon Palmer's farm for $1 million apiece, for false arrest.   Crackdown habit   It's hard to know what the government agencies will do. While they have clearly shied away thus far from a legal confrontation over the leasing matter, the various searches suggest officials are seriously considering legal action, such as charges of violating the ban on interstate sale of raw milk. Or else they could continue their harassment actions in hopes of intimidating consumers and farmers, and scaring them away from the increasingly popular leasing arrangement.   Even without government legal action against RTCHF, there is the pending suit against the FDA by the Farm-to-Consumer Legal Defense Fund challenging the federal prohibition on interstate commerce of raw milk. Muscle, vitality, strength, power, energy, vigor, aggressiveness, and liveliness are words that come to mind when people think of the benefits of protein in their diet. The truth is quite the opposite. Bone loss, osteoporosis, kidney damage, kidney stones, immune dysfunction, arthritis, cancer promotion, low-energy, and overall poor health are the real consequences from overemphasizing protein. Protein serves as raw material to build tissues. Without sufficient protein from your diet, your body would be in trouble � but, aside from starvation, this never happens. Yes, a little protein is good, but more is not better. Protein consumed beyond our needs is a health hazard as devastating as excess dietary fat and cholesterol. Unfortunately, almost everyone on the typical Western diet is overburdened with protein to the point of physical collapse. The public has almost no awareness of problems of protein overload, but scientists have known about the damaging effects of excess protein for more than a century.

In his book, Physiology Economy in Nutrition, Russell Henry Chittenden, former President of the American Physiological Society (APS) and Professor of Physiological Chemistry at Yale, wrote in 1905, �Proteid (protein) decomposition products are a constant menace to the well-being of the body; any quantity of proteid or albuminous food beyond the real requirements of the body may prove distinctly injurious�Further, it requires no imagination to understand the constant strain upon the liver and kidneys, to say nothing of the possible influence upon the central and peripheral parts of the nervous system, by these nitrogenous waste products which the body ordinarily gets rid of as speedily as possible.�1

A Cluttered House 

Say you are building a house that requires one hundred sheets of plywood, but the lumberyard delivers two hundred sheets. Initially, you might think this is a good thing - a real windfall. But what do you really have? A big pile of expensive lumber cluttering your yard. The mess is an eyesore, a fire hazard, a potential source of physical injury, and it detracts from your property value. Disposal of the excess lumber will be costly and could result in physical injury. To make matters worse, the lumberyard delivered "Fire Retardant Treated" (FRT) plywood. The fire-retardants used are very acidic, and under humid conditions the acids weaken the lumber, leading to a potential structural failure of your house - a catastrophic threat to life and limb - not to mention your pocketbook.2

Lesson Learned: When building a house, take delivery of only the amount of lumber you actually need - and use only the safest construction materials.

What are Your Construction (Protein) Needs?

Protein from your diet is required to build new cells, synthesize hormones, and repair damaged and worn out tissues. So how much do you need? 

The protein lost from the body each day from shedding skin, sloughing intestine, and other miscellaneous losses is about 3 grams per day (0.05 grams/Kg).3 Add to this loss other physiological requirements, such as growth and repairs. The final tally, based on solid scientific research, is: your total daily need for protein is about 20 to 30 grams.4,5 Plant proteins easily meet these needs.6

So what are people consuming? Those living in many rural Asian societies consume about 40 to 60 grams from their diet of starch (mostly rice) with vegetables.6 On the Western diet, typical food choices centered around meat and dairy products, �a well-balanced diet,� provides about 100 to 160 grams of protein a day. A traditional Eskimo, eating marine animals, or someone on the Atkins diet, from various kinds of meat and dairy, might be consuming 200 to 400 grams a day.7 Notice that there can be a 10-fold (1000%) difference from our basic requirements and the amount some people consume. The resilience of the human body allows for survival under conditions of incredible over-consumption.

* Calculations based on 2,000 calories consumed for adults. Calories consumed on a weight loss program may often be less than 2,000 per day. In this case the absolute amount of protein would be proportionally less. Breast-fed infants consume about 350 to 1,100 calories a day.

Once the body�s needs are met, then the excess must be removed. The liver converts the excess protein into urea and other nitrogen-containing breakdown products, which are finally eliminated through the kidneys as part of the urine.

The Fate of Excess Protein? No!

There are two possible fates for excess nutrients: They can be stored, like excess dietary fats and oils are stored in the body fat (adipose) tissues of our belly, thighs, and buttocks - or the excesses can be eliminated. If protein were stored it would be deposited in our muscle tissues and people on the Western diet would all look like bodybuilders. Obviously, excess protein is not stored. Protein consumed in excess of the body's needs therefore must be eliminated, with some effort, and often at great expense to our health.

Excess Protein Burdens the Kidneys and Liver

Processing all that excess dietary protein � as much as 300 grams (10 ounces) a day �causes wear and tear on the kidneys; and as a result, on average, 25% of kidney function is lost over a lifetime (70 years) from consuming the Western diet.8,9 Fortunately, the kidneys are built with large reserve capacity and the effects of losing one-quarter of kidney function are of no consequence for otherwise healthy people. However, people who have already lost kidney function for other reasons � from an accident, donation of a kidney, infection, diabetes, and hypertension � may suffer life-threatening consequences from a diet no higher in protein than the average American consumes.10,11

The time-honored fundamental treatment for people with failing kidneys is a low-protein diet. End-stage kidney failure, requiring dialysis, can usually be postponed or avoided by patients fortunate enough to learn about the benefits of a low-protein diet.10-13 

People suffering with liver failure are also placed on diets low in protein as fundamental therapy � short of a liver transplant, this is the most important therapy they will receive. During the end stages of liver failure, patients will often fall into a coma from the build-up of protein breakdown products (hepatic coma). A change to a cost-free, very low-protein diet can cause these dying people to awaken. Well planned, plant-food based diets are particularly effective with both kidney and liver disease.14,15

Excess Protein Damages the Bones = Osteoporosis

Worldwide, rates of hip fractures (and kidney stones) increase with increasing animal protein consumption (including dairy products). For example, people from the USA, Canada, Norway, Sweden, Australia, and New Zealand have the highest rates of osteoporosis. 15,16 The lowest rates are among people who eat the fewest animal-derived foods (these people are also on lower calcium diets) � like the people from rural Asia and rural Africa.15,16 

Osteoporosis is caused by several controllable factors; however, the most important one is the foods we choose � especially the amount of animal protein and the foods high in acid.17-19 The high acid foods are meat, poultry, fish, seafood, and hard cheeses � parmesan cheese is the most acidic of all foods commonly consumed.20 This acid must be neutralized by the body.21 Carbonate, citrate and sodium are alkaline materials released from the bones to neutralize the acids. Fruits and vegetables are alkaline and as a result a diet high in these plant foods will neutralize acid and preserve bones. The acidic condition of the body caused by the Western diet also raises cortisol (steroid) levels. 22 Elevated cortisol causes severe chronic bone loss � just like giving steroid medication for arthritis causes severe osteoporosis.

The first artificial sweetener, saccharin, was synthesized in 1879. It became popular because of its low cost of production at the time of sugar shortages during World Wars I and II. After these wars, when sugar once more became available and inexpensive, the reasons for using saccharin shifted from economics to health (calorie reduction primarily). In the 1950s cyclamate was introduced, and Sweet �N Low became a popular mixture of a blend of saccharin and cyclamate. The artificial sweetener market was shaken in the 1970s when the FDA (Food and Drug Administration) banned cyclamate from all dietary foods in the USA because of a cancer risk found in experimental animals (other countries still allow cyclamate). In 1981 the next artificial sweetener, aspartame, marketed as Nutra-Sweet, became popular. Since then several new nonnutritive sweeteners have been introduced with a promise to be more like real sugar with few calories.

Consequence Two: Kidney Stones

Once materials are released from the solid bone, the calcium and other bone substances move through the blood stream to the kidneys where they are eliminated in the urine. In an effort to remove the overabundance of waste protein, the flow of blood through the kidneys (glomerular filtration rate) increases � the result: calcium is filtered out of the body. Naturally, the kidneys attempt to return much of this filtered calcium back to the body; unfortunately, the acid and sulfur-containing amino acids from the animal foods thwart the body�s attempts to conserve calcium. The final result is each 10 grams of dietary protein in excess of our needs (30 grams daily) increases daily urinary calcium loss by 16 mg. Another way of looking at the effects is: doubling protein intake from our diet increases the loss of calcium in our urine by 50%.25 Plant proteins (plant food-bases) do not have these calcium and bone losing effects under normal living conditions.

Once this bone material arrives in the collecting systems of the kidney it easily precipitates into sold formations known as kidney stones.27 Over 90% of kidney stones found in people following a high-protein, Western diet are formed primarily of bone-derived calcium. Following a healthy diet is the best way to prevent kidney stones.28 

Toxic Sulfur Distinguishes Animal Foods

The qualities of the proteins we consume are as important as the quantities. One very important distinction between animal and plant-derived protein is that animal proteins contain very large amounts of the basic element sulfur. This sulfur is found as two of the twenty primary amino acids, methionine and cysteine. Derived from these two primary sulfur-containing amino acids are several other sulfur-containing amino acids � these are keto-methionine, cystine, homocysteine, cystathionine, taurine, cysteic acid.

Compare the relative amounts of sulfur containing amino acid, methionine, found in these common foods (based on the same number of calories):24 

• Beef provides 4 times more than pinto beans
• Eggs have 4 times more than corn
• Cheddar cheese has 5 times more than white potatoes
• Chicken provides 7 times more than rice
• Tuna provides 12 times more than sweet potatoes

Even though sulfur-containing amino acids are essential for our survival, an excess of these amino acids beyond our needs places a critical burden upon our body and detracts from our health in six important ways:

1) Amino acids, as the name implies are acids; the sulfur-containing amino acids are the strongest acids of all, they breakdown into powerful sulfuric acid. Excess acid, as discussed above, is a primary cause of bone loss leading to osteoporosis and kidney stone formation.29

2) Methionine is metabolized into homocysteine � animal foods are the major source of the amino acid, homocysteine, in people � the more meat in the diet, the higher a person�s blood level of homocysteine. A diet high in fruits and vegetables lowers the levels of this amino acid. Epidemiological and clinical studies have proven homocysteine to be an independent risk factor for heart attacks, strokes, closure of the arteries to the legs (peripheral vascular disease), blood clots in the legs (venous thrombosis), thinking problems (cognitive impairment), and even worse mental troubles, like dementia, Alzheimer's disease, and depression.30

3) Sulfur feeds cancerous tumors. Cancer cell metabolism is dependent upon methionine being in the diet; whereas, normal cells can grow on a methionine-free diet (feeding off of other sulfur-containing amino acids). This methionine-dependency has been demonstrated for breast, lung, colon, kidney, melanoma, and brain cancers.31,32 Increasing methionine in the diet of animals promotes the growth of cancer.33

There is also evidence of cancer promoting effects of methionine mediated through a powerful growth stimulating hormone, called insulin-like growth factor - 1 (IGF-1).34 Meat and dairy products raise IGF-1 levels and promote the growth of cancers of the breast, colon, prostate, and lung.35 

4) Sulfur from sulfur-containing amino acids is known to be toxic to the tissues of the intestine, and to have deleterious effects on the human colon, even at low levels.36 The consequence of a diet of high-methionine (animal) foods may be a life-threatening inflammatory bowel disease, called ulcerative colitis.37-38

5) Sulfur restriction prolongs life.39 Almost seventy years ago, restricting food consumption was found to prolong the life of animals by changing the fundamental rate at which aging occurs.40 Restriction of methionine in the diet has also been shown to prolong the life of experimental animals. By no coincidence, a diet based on plant foods is inherently low in both calories and methionine � thus the easiest and most effective means to a long and healthy life.

6) Possibly a stronger motivation to keep protein, and especially methionine-rich animal protein, out of your diet is foul smelling odors � halitosis, body odor, and noxious flatus � akin to the smell of rotten eggs � are direct results of the sulfur (animal protein) you eat.41,42

Do Not Waste Your Health Away

Animal foods, full of protein waste, promote poor health and early death by accelerating the aging process and increasing the risk of diseases, like heart disease, diabetes, and cancer, that in their own right, cause premature death. From now on, think of the excess protein you consume as garbage that must be disposed of in order to avoid toxic waste accumulation. Obviously, the best action is to avoid the excess in the first place and this is most easily accomplished by choosing a diet based on starches, vegetables, and fruits. Within a few days of changing to a healthy diet, most of the waste will be gone and the damaged tissues will begin healing. 

Unfortunately, you will find little support for such an obvious, inexpensive, and scientifically-supported approach � especially when the common masses of people worldwide are ignorant of the truth � most are gobbling down as much protein as they can stuff in their mouths � and the food industry is supporting this behavior by advertising their products as �high-protein� and "Atkins-approved" � as if this was somehow good for the body. This paradox is age-old, and because it is ruled by emotions, rather than clear thinking, a change in mind-set in your lifetime, should not be expected.

With the prolonged presence of achlorhydria, there is a much higher incidence of stomach cancer. Iodine is concentrated in the lacrymal glands of the eye, and a lack of iodine can cause dry eyes. Iodine can also be concentrated in the parotid and submandibular glands of the mouth, and iodine deficiency here can result in dry mouth. Iodine can be concentrated in the ovaries, and Russian studies done some years ago showed a relationship between iodine deficiency and the presence of cysts in the ovaries. The greater the iodine deficiency, the more ovarian cysts a woman produces. In its extreme form, this condition is known as polycystic ovarian disease."

The thyroid hormone deficiency on cardiovascular function can be characterized with decreased myocardial contractility and increased peripheral vascular resistance as well as with the changes in lipid metabolism. 42 patients with cardiovascular disease (mean age 65 +/- 13 yr, 16 males) were investigated if iodine insufficiency can play a role as a risk factor for the cardiovascular diseases. The patients were divided in 5 subgroups on the ground of the presence of hypertension, congestive heart failure, cardiomyopathy, coronary disfunction and arrhythmia. Urine iodine concentration (5.29 +/- 4.52 micrograms/dl) was detected with Sandell-Kolthoff colorimetric reaction. The most decreased urine iodine concentration was detected in the subgroups with arrhythmia and congestive heart failure (4.7 +/- 4.94 micrograms/dl and 4.9 +/- 4.81 micrograms/dl, respectively) . An elevated TSH level was found by 3 patients (5.3 +/- 1.4 mlU/l). An elevation in lipid metabolism (cholesterol, triglyceride) associated with all subgroups without arrhythmia. In conclusion, the occurrence of iodine deficiency in cardiovascular disease is frequent. Iodine supplementation might prevent the worsing effect of iodine deficiency on cardiovascular disease.

**What is happening is the ingested fluoride takes the place of iodine that should be there in the teeth, especially growing teeth. Iodine and thyroid for example have complete control of tooth growth along with some help from growth hormone. (6-8) It is only because our iodine intake has been decreasing over the years that fluoride has been mistakenly added to our water with the idea of helping children's teeth. It would have made more scientific sense to have added more iodine. Monitoring of the results of fluoridation and iodine intake have not been consistent. As one would expect there are lots of publications now about the problems with too much fluoride.

Fluoride has also been used against osteoporosis with beneficial results. This again is just replacing what iodine should be doing. The minor problems of osteopenia (minor loss of calcium) seen in some patients put on thyroid is related to the fact that the same patients are low in iodine. The low iodine causes the hypothyroidism and also the inappropriate short term bone response. If iodine is given with the thyroid hormone this abnormal response can be avoided. So persons taking adequate daily iodine will unlikely to ever develop osteoporosis.

The thyroid gland uses iodine to make thyroid hormone. We know the thyroid gland appeared in evolution at the same time as back bones (vertebrates) . Radioactive iodine injected into patients shows a full outline of the bones on a total body scan. This means one of the places iodine goes to immediately is bones. Thyroid hormone makes bones grow, mature and remodel, when necessary. Together thyroid hormone, iodine and growth hormone maintain a healthy bone structure. As vertebrates (animals with backbones) are the only animals with thyroid glands it makes sense that iodine and thyroid control bone structure and function.(6- 8)

Like Vitamins C and D, Selenium and Magnesium, Iodine is more than often deficient in out diets. This of course is in addition to good diet and other supplements such as B complex, boron etc.

Sadly Iodine has been systematically removed from our food sources such as Milk, now from about 50% of the salt sold in the US and India and even from bread where it has been replaced with Bromine another toxic substance like Fluoride. One has to wonder why.

While there are a lot of reasons why one should get tested for Iodine insufficiency before supplementing the major one is allergy. If one can eat iodized salt than allergy is generally not an issue. Based on the Japanese intake a daily dose of 12 mg (2 drops of Loguls iodine) is the least that is needed. Szent-Gyorgyi the original researcher of iodine and the inventor of Vitamin C felt that 60 mg daily intake to be safe.

Note: For better absorption iodine works best in conjunction with Vitamin C. Take separately with at least an one hour interval.

Based on a review of the literature, and recent clinical research studies 2-13, the concept of orthoiodosupplement ation can be summarized as follows:

1. The nutrient iodine is essential for every cell of the human body requiring peripheral concentrations of inorganic iodide ranging from 10-6M to 10-5M.

2. In non-obese subjects without a defecting cellular transport system for iodine, these concentrations can be achieved with daily intake of 12.5 mg to 50 mg elemental iodine. The adult body retains approximately 1.5 gm iodine at sufficiency. At such time, the ingested iodine is quantitatively excreted in the urine as iodide.

3. The thyroid gland is the most efficient organ of the human body, capable of concentrating iodide by 2 orders of magnitude to reach 10-6M iodide required for the synthesis of thyroid hormones when peripheral levels of inorganic iodide are in the 10-8M range.

4. Goiter and cretinism are evidence of extremely severe iodine deficiency, because the smallest intake of iodine that would prevent these conditions, that is 0.05 mg per day, is 1000 times less than the optimal intake of 50 mg elemental iodine.

5. The thyroid gland has a protective mechanism, limiting the uptake of peripheral iodide to a maximum of 0.6 mg per day when 50 mg or more elemental iodine are ingested. This amount therefore would serve as a preventive measure against radioactive fallout.

6. An intake of 50 mg elemental iodine per day would achieve peripheral concentration of iodide at 10-5M, which is the concentration of iodide markedly enhancing the singlet triplet radiationless transition. Singlet oxygen causes oxidative damage to DNA and macromolecules, predisposing to the carcinogenic effects of these reactive oxygen species. 5 This effect would decrease DNA damage, with an anticarcinogenic effect.

7. Preliminary data so far suggest that orthoiodosupplement ation results in detoxification of the body from the toxic metals aluminum, cadmium, lead and mercury.

8. Orthoiodosupplement ation increases urinary excretion of fluoride and bromide, decreasing the iodine-inhibiting effects of these halides.

9. Most patients on a daily intake ranging from 12.5 mg to 50 mg elemental iodine reported higher energy levels and greater mental clarity with 50 mg (4 tablets Iodoral), daily. The amount of iodine used in patients with Fibrocystic Disease of the Breast by Ghent et al20 is 0.1 mg/Kg BW per day, 10 times below the optimal daily intake of 50 mg. In our experience, patients with this clinical condition responded faster and more completely when ingesting 50 mg iodine/iodide per day.

10. For best results, orthoiodosupplement ation should be part of a complete nutritional program, emphasizing magnesium instead of calcium.

11. A beneficial effect of orthoiodo supplementation was observed in the clinical conditions listed in Table I.5,7,12,13

12. The iodine/iodide loading test and serum inorganic iodide levels are reliable means of assessing whole body sufficiency for elemental iodine for quantifying the bioavailability of the forms of iodine ingested and for assessing cellular uptake and utilization of iodine by target cells.

13. Orthoiodo supplementation may be the safest, simplest, most effective and least expensive way to solve the health care crisis crippling our nation.

Does everyone need iodine supplementation?
Iodine supplementations should be prescribed only if indicated by the results of iodine testing. Iodine testing kits may be ordered from my office (1-877-900-5556) by individuals with a physician's order or by health care professionals. If ordered by an individual, test results will be returned to the ordering physician; if ordered by a health care provider, test results will be returned to the health care provider. A cost of $80 per kit covers the cost of the testing kit, testing services, and return postage (charges for additional postage will apply if mailed to location outside the U.S.). A urine iodine spot test was developed by the World Health Organization and looks for iodine sufficiency to prevent goiter. This test is now offered through our office for an additional ($30) thirty dollars making the total $110.

Why is iodine deficiency common in the United States?
We first need to note that the body produces no iodine, and there is no organ other than the thyroid that can store large quantities of iodine. In some areas of the US, including mountain regions, the Mississippi River Valley, the Ohio River Valley, and the Great Lakes regions, the soil has always had a very low iodine content. But even in other areas of once iodine-rich soil, over farming has frequently depleted this iodine content. Hence, we no longer get adequate iodine via the plants we consume. To compensate for this, iodine was added to salt, bread, and milk. Today iodine is no longer added to bread or to milk, and the amount of iodine added to salt has steadily declined over the years. All of these factors contribute to the current prevalence of iodine deficiency in the United States.

Is there enough Iodine in our salt?
When people go shopping for salt they will notice there is iodized salt verses regular salt. This is also true for sea salt that is plain sea salt verses sea salt with iodine. There is more iodine in iodized table salt that there is in plain sea salt, which contains very little iodine to start with. Quite frequently we see articles in the local press showing that there is a high amount of iodine in salt and we need to reduce the total amount of salt because of the potential damage from iodine. However, during the last National Nutritional Survey called the NHANES III from 1988 - 1994, the study revealed that 15% of the U.S. adult female population suffered from iodine insufficiency where this was defined as a urine iodine level 60 meq per liter. Another misconception that is out on the market is that high consumption of iodized salt helps prevent iodine deficiency. The fact is that iodized salt contains 74meg of iodine per gram of salt. The purpose of iodization of salt was to prevent goiter and cretinism and was never meant for optimal iodine requirements by the human body. An example of this would be the ingestion of iodine in order to control fibrocystic breast disease that is a level of five milligrams of iodine per day. In this particular case one would need to consume 68 grams of salt. In Japan, the Japanese population has an intake of around 13.8 milligrams of iodine per day. Among the population of the Earth, the Japanese have the lowest prevalence and incidence of female reproductive organ cancer in their tissues.

Can I use seaweed purchased from the grocery store to supplement my body with iodine?
Seaweed sold in the United States has a tremendous variation in the amount of iodine content. In Japan, the average Japanese eats around 13.8 mg of iodine per day with the vast majority of that iodine coming from seaweed that has been specifically grown and cultured to maximize iodine trapping in the seaweed. To my knowledge, this particular type of seaweed is not being sold in the United States at the present time.

What about iodine and aging?
As most of us know, hypertension (high blood pressure) often becomes an issue as we age. Because of this, many are being told that they need to decrease the total amount of salt in their diet. However, we must realize that most people over age 60 are becoming depleted of iodine due to the lack of iodine in the diet and that this particular group of individuals is also the group with the highest occurrence of thyroid nodules and goiters. Also of interest is that 25% of the people in this age category will become senile as a result of low thyroid (hypothyroidism) . Iodine supplementation may alleviate these iodine-related maladies, but iodine testing and thyroid studies such as a thyroid ultrasound and thyroid lab tests should be conducted prior to beginning iodine supplementation therapy.

Can Iodine be used while a woman is pregnant?
In Japan, the average Japanese woman is eating 13.8 mg of iodine per day while the average American woman consumes 100 times less iodine per day (approximately 0.138 mg per day). For iodine supplementation, I have been prescribing Iodoral, a product made by the Optimox Corporation. Iodoral contains a 12.5 mg combination of iodine/iodide per tablet. Iodine is very crucial in the first three years of life from the development of the fetus inside the womb until two years after birth. In the development of a child's IQ, I feel that it would be very advantageous for the mother to supplement her diet during pregnancy and, if she is nursing the child, for the first two years after pregnancy.
