This video tutorial is almost exactly how I make mine. I use a large glass hinged jar to store it in and I keep it out on the counter and on or in another container because initially the fermentation juices run out. I keep mine on the counter - I don't refrigerate. I slice purple cabbage, napa cabbage, red onion, garlic, and carrot fairly thin, put in a bowl and sprinkle a little salt on it and grind it in your hands or crush it with something to break it down - you want the juices, but don't over salt - better under salting the first time - too much salt will ruin it IMO.
